Cauliflower Pizza by The Green Kitchen Stories

French - Today, I would like to share with you one of my favorite and the most inspiring blog, book and persons I'm following during a long time: Isaac, Elsa, Luise & David from The Green Kitchen Stories. They are vegetarian and cook and eat healthy with fresh and natural ingredients, whole foods and organic products. There blog/book shows how easy it is to cook and eat healthy vegetarian recipes and how much energy you can get from eating nutritious food. 

So, here I would like to share with you, one of their amazing recipe: Pizza with a cauliflower base. They transform the classic pizza recipe (full of gluten and greasy) by a super-healthy one (full of vegetables) It is made out of cauliflower mixed into rice-like consistency, almond flour, oregano (I used thyme), salt and peper and eggs (which can be replace by chia seeds). Once combined, you spread it out on your pan (previously greased) and pre-bake for 25 minutes. Once ready, you can add a homemade tomato sauce plus any extra toppings you like. I chose to add cherry tomatoes, mushrooms, mozzarella, black olives and basil. 

Green Pizza with a Cauliflower Base
Makes 1 pizza base

  • florets from 1 cauliflower (600 ml for 1 pizza)
  • 80 g  ground almonds (almond flour)
  • 1 tbsp dried oregano or thyme 
  • sea salt and freshly ground black pepper
  • 3 organic eggs, beaten (or chia mixture: Measure 30 g of chia seeds into a bowl and add 175 ml of water. Stir well and place in the fridge for 15 minutes before use) 
  1. Preheat the oven to 200°C / 400°F and line a baking tray, spray with virgin olive oil or use a baking paper.
  2. Coarsely chop the cauliflower, place in food processor and blend until it is a fine rice-like texture. Measure 600 ml of the cauliflower ‘rice’ and place in a mixing bowl.
  3. Add the ground almonds, oregano and seasoning and mix with your hands. Make a well in the centre and add the eggs.
  4. Use your hands to pull the dry ingredients towards the middle until everything is combined and you can shape it into a ball. It should be more loose and sticky than a traditional pizza dough.
  5. Transfer to the baking paper and form into a pizza base by flattening the dough with your hands. Make the edges slightly higher. Pre-bake for 25 minutes or until golden.
  6. Meanwhile, prepare the pizza topping. Remove the crust from the oven. Cover it with tomato sauce and add any toppings you like and put it back in the oven for 5-10 more minutes. Take it out the oven and bon appétit!

Basic Tomato Sauce 1L

  • 2 tbsp cold-pressed olive oil
  • 1 yellow onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1/2 tsp dried chili
  • 3 x 400 g cans whole plum tomatoes
  • 5 sprigs of basil, leaves picked
  • sea salt and freshly ground pepper
  1. Heat oil in a saucepan on medium heat. Add onion, garlic and chili and sauté for a couple of minutes until golden.
  2. Stir in the tomatoes, basil, salt and pepper. Use a wooden spoon to crush the tomatoes.
  3. Lower the heat, cover and gently simmer for about 20 minutes. Use immediately.
