Vegan Overnight Chia Pudding

French - I'm a big fan of preparing breakfast, organizing brunch or everything that involves food and morning together! So when it comes to preparing my own breakfast in advance, the nigh before, I suddenly become very excited to go to bed. On a regular basis, my morning routine is pretty much the same, but this time I wanted to see if another breakfast could satisfy me as the miamôfruits does. Once in a while, switching a healthy eating habit for another one that can be prepared overnight, can be very useful especially when you are rushing out the door in the morning. And I have to say, that this vegan overnight chia pudding is delicious, kept me satisfy for hours and is full of healthy goodness. 

Recipe for a big jar:

Overnight chia pudding:

  • 1 banana
  • 5 tablespoons of chia seeds
  • 200 ml of vanilla soja milk
  • 1 vanilla bean
  • 1 teaspoon of cinnamon
  1. Mash one banana in a bowl. Add the chia seeds and mix well until combined.
  2. Pour in the vanilla soja milk, vanilla, and cinnamon and whisk until combined.
  3. Chill in fridge overnight to thicken.

Toppings:

  • 1 Kiwi
  • 2 Strawberries
  • 1 Plum 
  • 1 pinch of bee pollen
  • 1 pinch of buckwheat
  • 5 almonds
  • 5 hazelnuts
  1. In the morning, place your fruits on top of the chia pudding.
  2. Sprinkle grains, nuts and bee pollen on top of fruits.
  3. Ready to start a beautiful day
